Ham Toasts

8 ea.        Thick sliced bread toasted one side  
To taste    Butter  
To taste    Mustard  
1 ½ c.    Chopped cooked ham  
1 ea.        Finely chopped shallot  
¼ tsp.    Tabasco  
1 c.        Grated Cheddar or Gruyere cheese

1. Spread the toasted bread well with butter and then with mustard.
2. Mix the chopped ham with shallots, cayenne, and cheese, and spread on the bread.
3. Place under the broiler long enough for the cheese to melt.
4. Cut into fourths and serve at once.
