Chocolate Chip Berry Muffin

10 oz. Butter
10 oz. Sugar
3 oz. Brown sugar
.25 oz. Salt
1 1/2 oz. Milk powder
6 oz. Eggs
1 lb. 4 oz. Cake Flour
1 oz. Baking powder
.5 oz. Vanilla extract
15 oz. Water
6 oz. Chocolate chips
1 c. Raspberries

Cream butter, sugars, salt and milk powder until smooth and fluffy. Add eggs to creamed mixture. Sift together cake flour and baking powder, stir into mixture. Add vanilla and water. Fold in chocolate and berries. Scoop mixture into prepared muffin or loaf pans. Bake at 350 degrees for 35-45 minutes or until firm to touch.

CoconutCoconut Macaroons

1 lb. 2 oz. Sugar
1 C. Water

6 Egg Whites
1/3 C. Sugar

1 lb. 4 oz. Shredded Coconut

1. Boil first two ingredients to create syrup (set aside to cool).
2. Whip next two ingredients to stiff peaks.
3. Add cooled syrup.
4. Fold in coconut.
5. Line cookie sheets with parchment paper, scoop dough to approximate golf ball size.
6. Bake at 350 degrees until golden brown.
7. Drizzled with melted chocolate if desired.
